Ableskivers-Danish Apple Cakes
Ableskivers-Danish Apple Cakes is an moderately easy dinner. Made with 2 c. flour, 1/2 tsp. salt, 1 1/2 c. buttermilk, 1/2 c. heavy cream and 4 egg yolks, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Sift together flour and salt.
Add buttermilk, cream and yolks.
Beat well.
Dissolve soda in boiling water.
Add to mixture.
Beat egg whites until stiff and hold a peak.
Fold in beaten egg whites to batter.
Put 1/2 teaspoon butter into each cup of the ableskiver pan. Drop spoonful of batter into each cup. When brown, turn with a fork and bake other side.
Serve with lots of butter, topped with syrup, fruit or like the Danes, with powdered sugar.
