Zucchini-Tomato Sauce
Zucchini-Tomato Sauce is an moderately easy dinner. Made with 1 large onion, chopped (1 c.), 1 clove garlic, minced, 1 lb. zucchini, trimmed and chopped, 1/4 c. olive oil and 2 large ripe tomatoes, peeled and chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onion, garlic and zucchini in oil in a medium saucepan until soft; stir in tomatoes, basil, salt, pepper and sugar.
Heat to bubbling; simmer 30 minutes or until sauce thickens slightly. Serve over fettucelle or spaghetti.
