Zucchini Stew
Zucchini Stew is an moderately easy dinner. Made with 2 lb. hamburger (beef, venison or elk, 1 large can or 4 fresh tomatoes, 1 large onion, 1 large green pepper and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Brown meat in small amount of oil.
Drain off oil.
Add tomatoes.
If fresh, slice or cut into chunks.
Cut onion into chunks.
Core (remove stem and seeds) pepper.
Slice zucchini (without peeling).
Add juice from tomato if canned, otherwise, use 2 cups tomato juice and 2 cups water.
Simmer until vegetables are tender.
