Zucchini Saute
Zucchini Saute is an moderately easy dinner. Made with 3 tbsp. butter/margarine, 3 c. unpeeled zucchini, cut in 1/8-inch slices, 1/4 c. green onion, sliced thin, 1 tbsp. minced fresh basil and 1 large tomato, peeled and cubed, this recipe delivers authentic, satisfying flavors. In a 10-inch pan, melt butter/margarine over medium heat.
Stir in zucchini, onion and basil.
Toss to coat all vegetables evenly. Cook, stirring occasionally until zucchini is almost tender-crisp, about 8 minutes.
Stir in tomato cubes; cook 1 minute.
Sprinkle with cheeses.
Cover and let stand for a minute or so until cheeses begin to melt.
