Zucchini Rice Casserole(Serves 15) is an moderately easy dinner. Made with 1 3/4 lb. small zucchini, sliced thinly, 3 c. cooked rice, 4 c. cooked chicken or turkey, cubed, 1 (1 lb.) can tomatoes, chopped and drained and 2 1/2 c. grated monterey jack cheese, this recipe delivers authentic, satisfying flavors. Cook zucchini in boiling water until tender-crisp (3 to 5 minutes).
Drain well.
In greased 3-quart casserole, layer rice, 1 cup Sour Cream Sauce, turkey or chicken, cheese, zucchini, tomatoes, rest of Sour Cream Sauce and parsley.
Bake 45 minutes at 350Β°.
