Zucchini Relish
Zucchini Relish is an moderately easy dinner. Made with 10 c. ground zucchini, do not peel, 4 c. onions, cut-up, 4 tbsp. coarse salt, 2 1/2 c. white vinegar and 1 tbsp. each: nutmeg, dry mustard, turmeric, cornstarch, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Put zucchini, onion and salt in large bowl and mix well.
Let stand overnight.
Drain and rinse in cold water; drain again.
Put mixture in a large kettle with remaining ingredients.
Bring to a boil and simmer, uncovered, stirring occasionally for 30 minutes. Pour into jars and seal.
Process in boiling water bath for 5 minutes.
