Zucchini Relish
Zucchini Relish is an impressive dinner. Made with 5 c. grated zucchini, 2 c. grated onions, 6 1/2 tsp. salt, 1 c. diced green pepper and 1 c. diced red pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place zucchini, onions and salt in a large bowl.
Mix well and cover.
Refrigerate overnight. The next day, drain well and rinse under cold water. Drain for 1 hour.
Place mixture in a heavy pot with remaining ingredients.
Bring to a boil and simmer, stirring occasionally, 30 minutes.
Cool and store, covered, in refrigerator up to 4 weeks; or fill 3 to 4 pint jars, seal and process in boiling water for 10 minutes.
Good as a topping for burgers, sandwiches and cold meats.
