Zucchini Jack Casserole
Zucchini Jack Casserole is an impressive dinner. Made with 2 lb. zucchini (about 8 small), 4 eggs, 1 1/2 c. milk, 1 tsp. salt and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Slice zucchini crosswise, 1/4 inch thick (about 7 cups).
In large bowl, beat together eggs, milk, salt, baking powder and flour until smooth.
Stir in parsley, garlic, onion, green chiles, cheese and zucchini.
Spoon into a greased 9 x 13-inch baking dish.
Toss croutons in the melted butter and sprinkle on top.
Bake uncovered in 350Β° oven for 35 to 40 minutes, until set in center and squash is tender.
Let stand about 10 minutes before serving.
