Zucchini Crunch
Zucchini Crunch is an moderately easy dinner. Made with 8 c. peeled zucchini, diced, 1 c. sugar, 2/3 c. lemon juice, 1 tbsp. cornstarch and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
👨🍳 Instructions
Cook zucchini, sugar, lemon juice, cornstarch and cinnamon until zucchini is tender; drain liquid.
Mix flour, sugar and oleo like pie dough; put 1/2 in 9 x 13-inch pan.
Bake at 350° for 10 minutes.
Top dough with zucchini mixture.
Crumble rest of pie dough mixture on top and bake at 350° for 40 minutes.
