Zucchini Chow Chow
Zucchini Chow Chow is an moderately easy dinner. Made with 10 c. ground zucchini, 4 c. ground onions, 2 bell peppers (green), 5 tbsp. salt and 1 qt. vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine the first 4 ingredients and let set overnight (covered).
I use food processor for chopping.
Next morning, rinse well with cold water and drain real good (I use nylon net). Press firmly to get water out.
This is important.
After thoroughly draining, put in pan the vinegar, sugar, nutmeg, turmeric, mustard, cornstarch and celery seed.
Bring to boil; simmer 30 minutes.
Put in prepared jars and seal.
Real good.
