Zucchini Casserole
Zucchini Casserole is an easy dinner. Made with 3 to 4 green zucchini, 1 can stewed tomatoes, shredded mozzarella cheese, 1 to 2 eggs and approximately 1/2 to 3/4 c. parmesan cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut zucchini in strips.
Saute in olive oil and butter until browned.
Drain on paper towel.
Put zucchini and stewed tomatoes in casserole dish.
Sprinkle Mozzarella cheese on top.
Mix eggs and Parmesan cheese to thick consistency (but spreadable).
Spread over top of zucchini/tomatoes.
Cook at 350Β° for 20 to 30 minutes until lightly browned and hot.
