Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini, sliced and lightly steamed, 1 onion, chopped, 1 (4 oz.) can chopped chilies (i use 4 to 5 dashes of tabasco sauce instead), 2 eggs, beaten and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together eggs, cream of mushroom soup and milk.
Stir in rice, chopped onion and chilies.
Then stir in zucchini.
Pour into casserole and top with butter and grated cheese.
