Zucchini Casserole is an moderately easy dinner. Made with 2 or 3 medium-size zucchini, sliced, crisco shortening, 2 beaten eggs, 2 tbsp. water or more and 1 (15 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Fry zucchini in skillet with shortening until brown (zucchini should be dipped individually in beaten eggs and water mixture, then dipped in flour).

Layer in 8 x 8-inch pan (or larger, depending on size of zucchini) and put 1 tablespoon of sauce on each piece.

Between each layer, sprinkle cheese.

Continue until done, then leftover sauce can be evenly spread over top of zucchini and sprinkle again.

Bake at 350Β° for 1/2 hour covered with foil and 15 minutes uncovered.
