Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 3/4 stick butter, 1/2 medium onion, chopped, 4 medium zucchini, sliced, 4 to 5 medium tomatoes, skinned and diced and 1 lb. sharp cheddar cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute onion in butter over medium heat until clear.
Add zucchini and saute for 10 minutes.
Add tomatoes.
Saute for 10 more minutes or until zucchini is soft.
Season with salt and pepper.
Add grated cheese.
Place in casserole dish.
Bake at 325Β° for 15 to 20 minutes.
