Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 slices bread (crust removed), 2 c. thinly sliced zucchini squash, 1 can whole kernel corn, drained, 1 can diced ortega chiles and 2 c. milk, this recipe delivers authentic, satisfying flavors. Butter one side of bread slices, and place buttered side down in a 9x13 baking dish.
Spread zucchini over bread.
Sprinkle corn over squash, and then layer Ortega chiles over corn.
Beat milk, eggs, salt and pepper together.
Pour over zucchini mixture.
Bake at 350Β° for 40 minutes or until browned.
