Zucchini and Green Rice
Zucchini And Green Rice is an moderately easy dinner. Made with 1 1/2 lb. zucchini, 3/4 c. chopped parsley, juice of 1 lemon, 1 c. low-fat cottage cheese and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Slice zucchini in 1/4 inch rounds.
Steam until done but still firm.
Preheat oven to 350Β°.
Mix rice with lemon juice, parsley and seasonings.
In a greased casserole make a layer each of rice mixture, cottage cheese and zucchini.
Top with grated cheese. Bake uncovered for 10 to 15 minutes.
Sprinkle with Parmesan cheese.
(You may want to use more cheese than is suggested.)
