Yellow Squash Pickles
Yellow Squash Pickles is an moderately easy dinner. Made with 12 c. yellow squash, sliced 2 c. chopped onions, 2 red peppers, chopped, 2 c. white vinegar, 3 c. sugar and 2 tsp. mustard seed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cover squash, onions and peppers with cold water that has 2 Tbsp. salt (pickling) added to it. Let stand for 2 hours, then drain off water.
Make a syrup of vinegar and sugar.
Put mustard see and celery seed in a cheese cloth and put with syrup mixture. Boil mixture then add drained squash, onions, and peppers.
Bring to a boil again and cook for 5 to 10 minutes.
Pack in hot jars and seal.
