Syrup, sugar and water to 242Β°. Whip egg whites very stiff.
In another bowl beat egg yolks stiff.
Combine the 2 and whip in syrup in thin stream.
When stiff and ready to spread add butter. Keep vessel covered for first cooking of sugar to prevent crystallization on sides of pan.
