Yam Cake
Yam Cake is an impressive dinner. Made with 1 c. mashed yams, 2 c. brown sugar, packed, 4 eggs, 1/2 tsp. vanilla and 2 1/2 c. plain flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil yams, mash and let cool.
In large bowl, cream together butter and sugar until fluffy.
Add eggs one at a time, beating after each egg.
Stir in lemon juice and vanilla.
Sift flour, soda, baking powder, cinnamon, salt and nutmeg.
Beat into first mixture; add nuts and turn into a greased and floured 10-inch tube pan.
Bake at 300Β° for 1 hour and 20 minutes or until a wooden pick comes out clean.
