Yam Biscuits
Yam Biscuits is an moderately easy dinner. Made with 1 3/4 lb. yams, 1/2 c. shortening, 1 1/2 c. all-purpose flour, 2 tsp. baking powder and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil potatoes until tender.
Drain, remove skins and mash. Beat shortening into hot yams until blended.
In a separate bowl, sift dry ingredients together.
Add to yams and work together until well blended.
Roll out 1/2-inch thick and cut with floured 2-inch cutter.
Place slightly apart on ungreased baking sheet. Bake in preheated 450Β° oven for 15 to 18 minutes.
(Bottoms will be very dark, but will not taste scorched.)
