Yam-Apple Casserole
Yam-Apple Casserole is an moderately easy dinner. Made with 2 (no. 2 1/2) cans yams, 1 large (no. 303) can pineapple chunks, 4 or 5 large cooking apples, 3/4 c. sugar and 4 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°.
Grease large casserole.
Drain yams and pineapple.
Reserve juices.
Place 2 cups of this reserved juice, the sugar and cornstarch in a saucepan.
Cook until thick.
Stir in cinnamon and salt.
Peel the apples.
Core and slice.
Slice the yams if they are whole.
Spread them in bottom of casserole. Spread apples over yams and then top with pineapple.
Pour the sauce over all.
Bake 40 to 45 minutes.
