White Fudge
White Fudge is an moderately easy dinner. Made with 2 1/4 c. sugar, 1/2 c. sour cream, 1/4 c. milk, 2 tbsp. butter and 1 tbsp. light corn syrup, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Combine sugar, sour cream, milk, butter, corn syrup and salt in a heavy pan.
Stir over moderate heat until sugar is dissolved and mixture reaches a boil.
Boil over moderate heat for 9 to 10 minutes to 238° (soft ball stage).
Remove from heat and allow to stand until lukewarm (110°), about 1 hour.
Add and beat until mixture just begins to lose its gloss and holds its shape. Quickly stir in walnuts and cherries.
Turn into an oiled pan. Let stand until firm before cutting.
Makes 5 1/2 pounds.
