Washday Soup is an moderately easy dinner. Made with 1 bag navy beans, 1 large finely minced onion, 1/2 c. coffee, 1/2 c. minced carrots and ham or bacon (to season with), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Put navy beans in a big pot of salted water to soak overnight. Put on to cook about six in the morning, the same time you start your wash water.

Boil with bacon or ham.

Let cook on low burner and check in between loads of wash.

Add your onion at daylight before you hang out the overalls.

About 9 o'clock, have a quick cup of coffee and dump 1/2 cup in the beans.

Add carrots at bleach time, around eleven.

Serve at noon with soda crackers or cornbread and slaw you made the night before.
