Velvet Soufflé
Velvet Soufflé is an moderately easy dinner. Made with 3 eggs, separated, 3 oz. sugar, 2 tbsp. water, 2 tsp. gelatin and 3 oz. dark chocolate, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Prepare a 5-inch soufflé dish with a 2-inch paper collar. Whisk egg yolks and sugar in a bowl over a pan of hot water until thick and creamy.
Remove from heat; whisk while cooling.
Put the water into a small bowl; sprinkle the gelatin over it and leave to "sponge."
Melt the chocolate.
In a bowl over hot water, melt the gelatin.
Add the gelatin to the egg mixture; mix well.
Add the melted chocolate and brandy; mix again.
Whip cream lightly and fold into the mixture.
Whisk the egg whites until stiff and fold in carefully.
Pour the mixture into the soufflé dish and refrigerate.
Decorate with whipped cream and chocolate.
