Velvet Mushroom Soup
Velvet Mushroom Soup is an moderately easy dinner. Made with 1/2 lb. mushrooms, sliced, 1/2 c. chopped onion, 1 c. chopped fresh parsley, 1/4 c. butter and 1 tbsp. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a large saucepan, over low heat, cook mushrooms, onion and parsley in butter until tender.
Stir in flour and cook 1/2 minute.
Remove from heat and gradually add broth, stirring constantly.
Bring to a boil.
Stir in sour cream until blended. Heat through, but "don't boil".
