Vegetable Rice Casserole
Vegetable Rice Casserole is an moderately easy dinner. Made with 2 tsp. vegetable oil, 2 medium green peppers, cut into strips, 1 c. chopped onion, divided, 2 c. chopped cauliflower and 2 c. chopped broccoli, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place oil in large skillet; add green pepper, 1/2 cup chopped onion, cauliflower, broccoli and garlic.
Cook on high for 5 minutes.
Stir in thyme.
Remove from heat.
Dissolve bouillon granules in water in 2-quart casserole dish.
Stir in rice, 1/2 cup chopped onion and soy sauce.
Cover and bake at 350Β° for 20 minutes.
Remove casserole from oven and stir in vegetable mixture..
Cover, bake an additional 10 to 15 minutes or until all liquid is absorbed.
