Vegetable Rice Casserole
Vegetable Rice Casserole is an moderately easy dinner. Made with 1 c. uncooked brown rice, 1 tbsp. cooking oil, 1/2 c. chopped onion, 1/2 c. chopped green pepper and 2 c. sliced zucchini squares, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute rice in oil, over low heat, until golden brown (5 to 10 minutes).
Spread rice in a greased 2 1/2-quart casserole dish. Layer onion, green pepper, zucchini and tomatoes over rice.
Add salt and garlic to broth, then pour over vegetables.
Cover and bake at 350Β° for 1 hour and 15 minutes, or until liquid is absorbed and vegetables are tender.
Makes 6 to 8 servings.
