Vegetable Manicotti
Vegetable Manicotti is an moderately easy dinner. Made with 4 uncooked manicotti shells, 1/2 c. zucchini, 1/2 c. broccoli, 1 (2.5 oz.) jar mushrooms, drained and 1/4 c. parmesan cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Microwave shells to desired doneness.
In small bowl combine zucchini, broccoli, mushrooms, Parmesan cheese and green pepper. Mix well and fill each shell with 1/2 cup of mixture.
Place in 2-quart casserole dish.
Pour spaghetti sauce over shells.
Cover with wax paper and microwave on High 4 to 5 minutes, turning dish 1/4 turn halfway through cooking.
Sprinkle with cheese and microwave uncovered on High 1 to 2 minutes until cheese is melted. Makes 2 servings.
