Una's Shrimp Creole
Una'S Shrimp Creole is an moderately easy dinner. Made with 1/4 lb. butter, 1 c. each: chopped green pepper, chopped onion, diced celery, diced green onions and tomato purée or 2 tbsp. tomato paste, 2 c. chopped canned tomatoes, 1 oz. lemon juice (about 2 tbsp.) and 2 oz. cornstarch (about 2 tbsp.), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt butter; saute pepper, onion, celery and green onions for about 5 minutes.
Add tomatoes and tomato paste with bay leaves. Simmer for 15 minutes.
Add shrimp; simmer for 15 minutes. Dissolve cornstarch in 1 pint water and add to shrimp mixture. Simmer for 5 minutes.
Add lemon juice and salt and pepper to taste.
Simmer for 15 minutes.
Serve over steaming rice or creamed potatoes.
Might add a few drops of Tabasco or red pepper.
