Twice-Baked Potatoes

Heat oven to 375°.
Rub potatoes with shortening.
Prick with a fork.
Bake until potatoes are tender, 1 to 1 1/4 hours. Increase oven temperature to 400°. Cut slice from top of each potato.
Scoop out inside, leaving a thin shell.
Mash potatoes. Add milk in small amounts, beating after each addition.
Add margarine, salt and pepper.
Beat until fluffy.
Fill shells with potatoes.
Sprinkle with shredded cheese.
Bake until golden, about 20 minutes.
