Turkey Sausage Casserole
Turkey Sausage Casserole is an moderately easy dinner. Made with 1 lb. turkey smoked sausage, 1/2 c. sliced fresh mushrooms, 1/2 c. sliced carrots, 1 medium zucchini, cut in half lengthwise and sliced (about 1 1/4 c.) and 2 tbsp. margarine or butter, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cut sausage into serving size pieces; set aside.
Saute mushrooms, carrots and zucchini in butter in a large skillet over medium-high heat.
Add tomatoes, water, basil, thyme and sausage. Bring to a boil.
Reduce heat to low, cover and simmer 5 minutes. Mix rice into liquid, cover, remove from heat and let stand 8 minutes.
Stir after 4 minutes.
Makes 4 servings.
