Trout Almondine
Trout Almondine is an moderately easy dinner. Made with 4 (6 to 8 oz.) trout fillets, 1/2 c. sliced almonds, 1/2 c. butter, 1 tbsp. chopped parsley and 1/3 c. olive oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Season the trout with salt and pepper; dredge trout with flour.
In a large skillet, heat the oil to moderately high heat. Add the fillets.
Saute the fillets until golden brown on both sides.
Transfer trout to paper towels to drain; keep warm.
Melt butter.
Add almonds and saute until light golden brown; pour the almond mixture over the trout and garnish with lemon and parsley. Serves 4.
