Trachok's Zucchini Bread
Trachok'S Zucchini Bread is an moderately easy dinner. Made with 3 eggs, well beaten, 2 c. sugar, 3 tsp. vanilla, 1 c. oil and 2 c. shredded zucchini (about 2 medium size), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat oven to 375°.
Grease and flour 2 loaf pans.
Beat eggs until light and fluffy.
Add sugar, oil and vanilla, blending well. Stir in zucchini.
Sift all dry ingredients together.
Blend with creamed mixture.
Fold in nuts and raisins.
Turn into 2 floured and greased pans.
Bake at 375° for 15 minutes, then at 350° for 45 minutes or until done.
Cool on racks.
Makes 2 loaves.
