Tortilla Soup
Tortilla Soup is an moderately easy dinner. Made with 1 small onion, chopped, 2 cloves garlic, pressed, 2 tbsp. vegetable oil, 1 c. tomatoes, peeled and chopped and 3 c. chicken stock, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a 3 or 4-quart pan, saute onions and garlic in oil until the onions are translucent.
Add tomatoes, chicken stock, tomato juice and water.
Season with chili powder, cumin and salt to taste. Cover and simmer 45 to 60 minutes.
Just before serving, bring liquid to a boil.
Add tortillas and cheese.
Cover, remove from heat and let sit 3 to 5 minutes.
Serve immediately.
