Tomato Topped Asparagus
Tomato Topped Asparagus is an moderately easy dinner. Made with 2 tbsp. chopped basil, 2 tbsp. cider vinegar, 1/4 tsp. sugar, 1 lb. fresh asparagus spears and 2 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine basil, oil, vinegar, salt, sugar and pepper in a jar. Cover tightly and shake vigorously.
Place asparagus in vegetable steamer (over boiling water), cover and steam 4 to 6 minutes. Arrange asparagus on serving platter and sprinkle with chopped tomato.
Drizzle vinaigrette mixture over asparagus.
