Tomato-Rice Soup
Tomato-Rice Soup is an moderately easy dinner. Made with 2 tbsp. butter, 1/2 c. chopped onion, 1/2 c. chopped celery, 1 large (28 oz.) can peeled tomatoes and 1 1/2 c. chicken broth, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Melt butter in large saucepan.
Saute onion and celery until very tender.
Mix tomatoes with chicken broth, onions, celery and butter in a blender jar; blend until smooth.
Pour into the saucepan and add the marjoram, basil, salt and pepper.
Bring mixture to a boil over medium heat.
Add rice and stir.
Cover, reduce heat to low and simmer about 15 or 20 minutes or until the rice is tender.
Serve with grated cheese.
