Tom's Fried Catfish
Tom'S Fried Catfish is an moderately easy dinner. Made with salt water, milk, 3/4 c. yellow cornmeal, 1/4 c. flour and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Fill the kitchen sink with cool water; add about 2 to 3 tablespoons salt and swish around.
Place catfish in water for approximately 30 minutes.
Remove fish from water, rinse and place in large bowl of milk.
Combine cornmeal, flour, salt, cayenne pepper and garlic powder.
Dredge catfish with mixture, shaking off excess.
Fill deep skillet half full with canola oil.
Heat to 350Β°.
Add catfish in a single layer and fry until golden brown, 5 to 6 minutes, depending on size.
Remove and drain on paper towels.
