The Original Berlin Fair Clam Chowder
The Original Berlin Fair Clam Chowder is an moderately easy soup you can prepare in about 1 hour 4 minutes. Made with clams, steamed and ground (save the juice from the steaming process), or 5 medium size potatoes, peeled and ground, medium onions, ground and scant 1/4 lb. salt pork, ground, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Use a coarse grinder for all ingredients.
Cook salt pork and onions just a little.
Add about 2 or 3 cups or more water, then the potatoes.
Cook until nearly done.
Add clams and the juice, salt, pepper and a little sugar (about 1 teaspoon).
Simmer about 1 hour uncovered.
