Thai Lemon Grass Soup
Thai Lemon Grass Soup is an moderately easy dinner. Made with 2 chicken breasts, diced, 8 c. chicken broth, 10 hot chilies, just broken with pestle, 6 kaffir lime leaves and 4 lemon grass stems, this recipe delivers authentic, satisfying flavors. Heat chicken broth in a pot.
Cut lemon grass into 1-inch lengths.
Add lime leaves, lemon grass, galangal and chicken to the broth.
Heat until chicken is cooked through, then add lime juice, fish sauce, chilies and mushrooms.
