Tennessee Buttermilk Biscuits

Preheat to 500°.
Mix flour and shortening.
Add just enough buttermilk until dough leaves side of bowl.
Too much milk dough sticky and difficult to handle, while too little milk makes biscuits dry.
Knead dough on a floured surface.
Roll dough and cut out biscuits.
Best to roll dough about before cutting.
Bake on an ungreased baking sheet, almost touching, at 500° for 8 to 10 minutes or until top is golden brown.
You may wish to dip cut dough into melted butter prior to baking.
