Tater Swiss Omelet
Tater Swiss Omelet is an moderately easy dinner. Made with 1/2 c. butter, 6 medium potatoes, 12 slices bacon, cooked and cubed, 1 (4 oz.) can mushrooms, sliced and drained and 1 c. shredded swiss cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt butter in large frying pan.
Add potatoes and fry until brown.
Place in 9-inch square baking dish.
Sprinkle with cooked and crumbled bacon.
Stir together egg yolks, mushrooms and cheese.
Beat egg whites until stiff, but not dry.
Fold cheese mixture into whites.
Pour over bacon.
Bake in preheated oven at 350Β° for 25 to 30 minutes or until set.
Serves 6.
