Tabouli
Tabouli is an impressive dinner. Made with 3 c. boiling water, 1 1/2 c. bulgur wheat, washed and drained (can be purchased at health food store), 1 medium onion, finely chopped, 2 large tomatoes, diced and 1 large green pepper, finely chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Pour boiling water over wheat in a large bowl and let stand for 2 to 3 hours or until water is absorbed.
Mix onion, tomatoes, green pepper and parsley into the wheat.
Mix remaining 9 ingredients in a jar and shake well.
Pour over wheat mixture and toss.
Cover and refrigerate 4 to 6 hours or overnight to allow flavors to blend.
Keeps well for 2 to 3 days.
This refreshing and healthy mix is great with Fritos or tortilla chips.
It's also great when served in pocket bread (pita or Arabic)!
Yields 6 cups.
