Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 6 large sweet potatoes, 1/2 c. salt free soft butter, 3 large eggs, room temperature, 1 c. sugar (granulated) and 1/4 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Wash potatoes and put in a large cook pot; cover with water and boil (add water as needed to keep covered) about 40 minutes or until done.
Drain and let cool.
When cool, peel and coarsely chop into large bowl.
Mash well and add all ingredients.
Mix well to blend.
Pour into shells.
Bake 15 minutes in a 425° preheated oven, then for 40 minutes in a 350° oven until filling is set and a knife inserted comes out clean.
Cover crust with foil if edges start to brown too fast.
Makes two 9-inch pies. Freeze any leftover batter.
