Combine potatoes, butter, egg yolks, brown sugar, salt and spices.
In milk, mix well.
Beat egg whites (at room temperature) on high electric mixer for 1 minute. Gradually add the 1/4 cup sugar, 1 tablespoon time, beating until stiff whites into potato mixture.
Spoon into unbaked pastry shell.
Bake at 450° for 10 minutes.
Reduce heat to 350° and bake an additional 45 minutes or until set.
Yield: 1 (9-inch) pie.
