Sweet Potato Muffins
Sweet Potato Muffins is an moderately easy dinner. Made with 1/2 c. margarine, 1 c. sugar, 2 eggs, 1 1/4 c. sweet potatoes, cooked and mashed and 1 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Preheat oven to 400Β°.
Grease muffin pans.
Cream sugar and margarine; add eggs and mix well.
Blend in sweet potatoes.
Sift flour, baking powder, salt and spices.
Add to other mixture alternately with milk.
Do not overmix.
Fold in nuts and raisins. Fill muffin tins 1/2 full.
Bake 25 minutes.
Batter can be made ahead and stored in refrigerator for 3 to 4 days. Yields 1 1/2 dozen.
