Sweet Potato Bread
Sweet Potato Bread is an impressive dinner. Made with 2 c. all-purpose flour, 2 1/2 tsp. baking powder, 1/2 tsp. salt, 1/4 tsp. ground allspice and 1/4 tsp. ground nutmeg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine first 4 ingredients in a large bowl; set aside.
Combine potatoes, sugar, margarine, milk, eggs, orange rind and nuts, beating well.
Add to dry ingredients, stirring until just moistened.
Pour batter into 9 x 5 x 3 loaf pan coated with vegetable cooking spray.
Bake at 350Β° for 45 minutes or until wooden toothpick inserted in center comes clean.
Cool in pan 10 minutes; remove from pan and cool completely.
Yield: 1 loaf, 18 1/2 slices (122 calories per slice).
