Sweet Potato Bake
Sweet Potato Bake is an moderately easy dinner. Made with 3 lb. sweet potatoes, 1 c. brown sugar, packed, 1 1/2 tbsp. cornstarch, 1/4 tsp. salt and 1/8 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook potatoes in salted water until tender, but not mushy; peel while hot, then cool.
Combine brown sugar, cornstarch, salt and cinnamon in heavy saucepan.
Stir in apricot nectar, water and orange peel.
Bring to full boil and stir constantly.
Remove from heat and stir in butter.
Cool slightly.
Stir in pecans.
Cut potatoes in half and put in loaf pan.
Pour sauce over potatoes so all are glazed.
Add marshmallows, if desired.
Bake, covered, at 375Β° for 25 minutes or until sauce is bubbling.
Makes 6 to 8 servings.
