Sweet Potato Apple Pie
Sweet Potato Apple Pie is an moderately easy dinner. Made with 1 c. flour, 1/2 tsp. salt, 1/3 c. shortening, 3 to 4 tbsp. cold water and 2 medium apples, cored and thinly sliced (2 c.), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In bowl, stir together flour and the first 1/2 teaspoon salt. Cut in shortening until piece are the size of small peas.
Sprinkle 1 tablespoon of the water over part of the mixture; toss with a fork to moisten.
Add remaining water, a tablespoon at a time, tossing until all of the mixture is moistened.
Form into a ball, flatten on lightly floured surface.
Place pastry in a 9-inch pie plate; crimp edges high.
Place apples in bottom of pastry.
In bowl, combine potatoes, eggs, cream, brown sugar, cinnamon, salt and nutmeg; beat until smooth.
Pour over apples.
Cover edges of crust with foil.
Bake at 375Β° for 25 minutes.
