Sweet Green Tomato Pickles
Crisp homemade bread-and-butter style green tomato pickles brined in pickling lime, then preserved with cider vinegar, celery seed, and clove. Sweet, snappy, and a end-of-garden tradition.

In a large plastic container, soak tomatoes in water and lime mixture for 24 hours. Rinse well and soak in cold water 3 hours. Combine vinegar, sugar and salt in another container.
Place pickling spice, cloves and celery seed in cheesecloth bag. Add to vinegar mixture.
Set aside. Drain water from tomatoes; pour vinegar mixture over the tomatoes.
Soak overnight.
Next morning, simmer mixture until the tomatoes are transparent (about 50 minutes). Fill in hot sterilized jars and process in boiling water bath 5 minutes.
