Super Carrot Cake
Super Carrot Cake is an impressive dinner. Made with 3 c. packed, shredded carrots, 1 tbsp. lemon juice, 1 (20 oz.) can crushed pineapple, well drained, 1 tsp. salt and 2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine carrots and lemon juice.
Combine flour, sugar, baking powder, baking soda, spices and salt in a bowl.
Beat in eggs, one at a time and stir in vanilla, coconut, walnuts, dates and pineapple until well blended.
Pour into greased pans (2 loaf pans).
Bake at 350Β° until toothpick comes out clean and cakes shrink away from sides of pan (approximately 60 minutes).
